VEGGIE LOVERS LENTILS OVER RICE – serves 6
This is another great vegetarian dish that I love to
make. Lentils are packed with
protein and fiber and are best used when soaked in water overnight. What I like too about this dish is that
it is SUPER easy to make!
3 cups cooked brown rice
1 Tbs. olive oil
2 tsp. minced garlic
2 cans (14.5 oz.) stewed tomato
1 large onion
1 tsp. dried Italian seasoning
2 medium green bell peppers
3 c. cooked brown lentils
Step #1: Cook lentils in boiling water until water is absorbed and lentils are soft. *
Step #2: Heat 2 tsp. olive oil over medium-high heat in an extra deep skillet. Peel and chop the onion, adding it as you chop. Stir.
Step #3: Chop the green pepper and add it to the onion. Stir for 1 minute.
Step #4: Add the garlic, tomatoes, and seasoning.
Step #5: Stir in lentils and 2 tsp. oil. Cook 2 minutes more. Add salt to taste.
Step #6: Serve over brown rice.
Step #7: Enjoy!
* I like to use Trader Joe’s pre-cooked brown lentils because they are quick and easy!*
