AM EGGBAKE – serves 8

If you are looking for a high-protein breakfast, this is it!  It’s quick and easy to make and is great for an improptu breakfast or brunch!

12 eggs
2 c. (16 oz.) cottage cheese
2 c. (12 oz.) shredded cheese
1/2 c. salsa

STEP #1:  Oil a 9x13 pan and preheat the oven to 350 degrees.

STEP #2:  Beat the eggs.  Add the cheeses and salsa and mix well.

STEP #3:  Pour the mixture into the pan.

STEP #4:  Bake for 40 minutes at 350 degrees.

STEP #5:  Serve with toast and/or fruit.

STEP #6:  Enjoy!
