JEN’S BEST CHOCOLATE CHIP COOKIES – makes 2 dozen
Everyone has their favorite chocolate chip cookie recipe and this one is mine! I love it because the ingredients are all natural and it uses maple syrup instead of white sugar. (It also happens to be a Vegan recipe but don’t let that make you think that it is lacking in taste or flavor in any way!)
1/2 c. maple syrup
1/2 c. canola oil
1/2 tsp. vanilla
1/2 c. coconut, shredded and unsweetened (optional)
1 1/2 c. whole-wheat pastry flour
1/2 c. chocolate chips
1/2 tsp. baking soda
1/4 tsp. salt (optional)
STEP #1: Combine the oil, syrup, and vanilla.
STEP #2: In a separate bowl, combine the flour, soda and salt; add the syrup mixture.
STEP #3: Fold in chips and coconut.
STEP #4: Drop by tablespoons onto an oiled or no-stick cookie sheet.
STEP #5: Bake at 350 degrees for 10-12 minutes until golden, but still soft.
STEP #6: Enjoy!
