Mandy sent this recipe in to Jen's Corner a few weeks ago so I thought I'd
share it. Here I have adapted part of the email she sent:
"Hi Jen! I really like your blog. Just thought I'd share the easiest
recipe I use. I was trying to lose weight after having my daughter and I
cut calories to 1350 per day until I met my goal. The food became quite
boring.
One day I tried baking boneless, skinless chicken breasts with "Rotel"
poured on each breast. (If you don't know what Rotel is, click here:
http://www.texmex.net/Rotel/main.htm) Bake at 350 degrees for a total of 40
minutes, with the chicken covered for the first 20 minutes. When the
chicken almost finished baking, I add non-fat mozzarella to the top of the
chicken and melt it - just a few strips per breast, 1/4 of a cup or less
each. I eat all the broccoli, carrots, or spinach I want with it. Easy
meal for under 190 calories (one piece of chicken with Rotel and cheese,
plus your choice of one of the three vegetables I listed). On the days I
wanted to splurge, I cut up the chicken and wrapped it in a low-fat tortilla
(but that adds about 130 calories to your meal)."
