Pea & Quinoa Salad

PEA & QUINOA SALAD – serves 4 to 6

Quinoa is a grain that I love to cook with for some variety and because, for a grain, it is higher in protein than most.  It is light and fluffy with a unique, nutty flavor.  This salad tastes very fresh and is good served warm or cold.

1 c. fresh or frozen peas
1 c. dry quinoa
2 c. water
1/4 c. minced shallot
1/4 c. fresh lime juice
2 Tbs. light oil
2 Tbs. soy sauce
1/4 c. minced cilantro
salt and fresh ground pepper, to taste

STEP #1:  Boil quinoa in water until water is absorbed; about 15 minutes.

STEP #2:  Steam peas or pop in microwave until slightly tender.

STEP #3:  Mix all ingredients together in a bowl.

STEP #4:  Serve immediately or refrigerate.

STEP #5:  Enjoy!
