Spinach Feta Pie

SPINACH FETA PIE – serves 8

This is a great low-carb recipe I found on the Zone web site.  It is chock-full of good veggies and low-fat cheese for some protein and calcium too.  Plus, with the red and green colors of the peppers and spinach, it is perfectly festive for the holidays!  And, of course, it is also easy to make.

4 tsp. olive oil
1 medium onion, chopped
2 tsp. chopped garlic
4 medium red bell peppers, chopped
30 black olives, quartered
24 oz. frozen chopped spinach
1 tsp. salt
1 large whole egg
15 oz. feta cheese
1 1/3 c. rolled oats

Step #1:  Preheat oven to 350 degrees.

Step #2:  In a large sauté pan, heat oil over medium heat.  Add onions through salt.  Cook until heated through and water has evaporated.

Step #3:  In a large bowl, beat egg and crumble in feta cheese.  Add spinach mixture and set aside.

Step #4:  To make the crust, put oats in a blender with a  steel blade and blend coarsely.

Step #5:  Add 1/3 c. ground oats to spinach mixture.  Spread remaining oats onto bottom of 9x13 in. Pyrex dish or large pie plate.

Step #6:  Evenly distribute spinach mixture.  Bake for 45 minutes or until firm.

Step #7:  Enjoy!
