SUNRISE OATMEAL – serves 1

I’m all about easy yet satisfying and nutritious morning meals so here is one of my favorites! 

1/2 cup dry rolled oats
1 cup water
1 or 2 soft boiled eggs
salt and pepper, to taste

Step #1: Mix oats and water in a bowl and microwave for 3 minutes (or follow your own instant oatmeal instructions).

Step #2: Bring a pot of water to boil and boil egg/s for approximately 3 minutes, or until soft.

Step #3: Lightly salt and pepper the oatmeal.  Peel the shell from the eggs and break them over the oatmeal.  Mix together.

Step #4: Enjoy!

I love this meal because of the nutritional bang it delivers!  Protein, fiber, complex carbs… and only about 300 calories!  I add an orange or grapefruit to it (and my morning cup of green tea) and it keeps me going all the way until lunch.  I know it might sound strange but I guarantee it tastes great!
