YOGURT CRUNCH – serves 1
I love eating yogurt and have found a great way to boost its nutritional value and make it a great meal!
1 cup 2% Greek (Fage) yogurt, or any other plain yogurt (Brown Cow, Stoneyfield, etc.)
1/4 cup Ezekiel Flax Cereal, or Grapenuts
2 Tbs. ground flax seed
maple syrup, to taste
1/4 cup fresh berries OR 1/4 cup gogi berries or raisins, optional
Step #1: Mix all together well in a small bowl.
Step #2: Eat with fruit mixed in or with a piece of fruit (orange, grapefruit, melon, etc.) on the side.
Step #3: Enjoy!
The Greek yogurt is high in protein – 17 grams per 1 cup serving – and the ground flax and flax cereal are high in fiber, complex carbs and healthy fats. Adding berries adds important antioxidants and vitamins – plus great color and taste! I love this dish as an easy breakfast or action-packed snack when I need one.
